I made these last night




What are these? Well, so glad you asked.


They are BBQ Pizza Cups
(loosely based on Hamburger Cupcakes recipe at Kelly's Korner Recipes)


1 Pillsbury Refrigerated Pizza Crust
1 lb ground beef
1/2 onion
1/2 to 3/4 cup Ketchup
1 to 1 1/2 Tbls yellow Mustard
1 Tbls Brown Sugar
1 1/2 Tbls Worchestershire
Grated Cheese - whatever you have
Salt and Pepper
Green onions


Preheat oven to 425. Roll out pizza crust. Fairly thin is best so your cups aren't too thick. Cut into 9- 10 squares and place each squared in greased muffin tin. Make sure the edgest hang over the cup lip or it will sink into the cup. Plus, they look better:) Bake crusts for about 10 minutes until lightly browned and no longer doughy.

Brown ground beef, add onions and salt and pepper and cook until translucent. Drain. Mix ketchup, mustard, brown sugar and Worchesterhire in a bowl then stir into meat mixture. I eyeballed all the measurements, so feel free to adjust to your liking. Cook for a minute or two so that the flavors are mixed well. Here they are prior to final baking session




Scoop a rounded spoonfull of meat mixture into crust cups and top with grated cheese. Bake until cheese is melted and meat mixture is hot, approximately 8 minutes. Top with chopped green onions. YUM! I think kids would love these too.
